      The International Visitor Corps of Jacksonville has announced the winners of its Chocolates of the World Dessert Competition, held February 8, 2008 at the Sawgrass Marriott in Ponte Vedra. The winners were selected by 300 guests who tasted the desserts and voted for their favorites. Proceeds from the event benefit the International Visitor Corps of Jacksonville.
     The prize for best plate presentation went to Chefs Jaycel Adkins and Judy Tan, owners of Etiquette of Chocolate, Orange Park, for their ‘Bon Bons 3 Ways.’
     The prize for best chocolate exhibit went to Chef James Mullaney, Executive Pastry Chef, The Cloister at Sea Island, Georgia.
     First prize for best-tasting dessert went to Chef Hector Gonzalez, Executive Chef, TPC Sawgrass, Ponte Vedra Beach, for his ‘White Chocolate Mousse Dome’; second prize for best-tasting dessert went to Chef James Mullaney, Executive Pastry Chef, The Cloister at Sea Island, Georgia, for his ‘Mocha Obsession’; and third prize for best-tasting dessert went to Chef James Muller, Executive Chef, Maggiano’s Little Italy, Jacksonville, for his ‘Triple Chocolate Hazelnut Tiramisu.’
     Distinguished Chef awards went to Chef Elizabeth Hancock, Pastry Chef, Sawgrass Marriott Golf Resort and Spa, Ponte Vedra Beach, and Chef Arthur White, Executive Chef, Savannah Bistro, Holiday Inn Jacksonville Airport.
     Upcoming classes at your local Williams-Sonoma (St. Johns Town Center 904-998-4303):
     Sunday, March 2nd. Get a head start on Easter at the Williams-Sonoma free technique class for Easter Baking and Cupcake Decorating.
      Sunday, March 9th. Take the mystery and intimidation out of making soufflés with the Williams-Sonoma Soufflés class. They’ll teach you how to make a basic soufflé base, incorporate sweet or savory flavors and even how to make a frozen dessert soufflé.
     Sunday, March 16th. They’ll also be holding an Easter Egg Decorating free technique class. You’ll learn the best practices for correctly boiling eggs and great decorating ideas, including beautiful patterns that can be mastered in one sitting. Kids are welcome with an adult.
     Even though these classes are free, you will need to call for more details and to sign up.
     Among other cooking classes and demos, Apron’s Cooking School will be holding two wine classes next month. The first is on Thursday, March 13th at 6:30 pm. Join this class to have the opportunity to have dinner and taste some Ravenswood Zinfandels. The second is on Friday, March 14th at 6:30 pm. Eric Lee, Simi Winery Chef, graduated with honors from the Culinary Institute of America in Hyde Park and will be teaching this wine class.
